- Season the beef by placing it in a bowl and coating with salt and pepper. Let sit for 10 minutes.
- Chop onions, carrots, and potatoes into uniform pieces. Layer onions at the bottom of the slow cooker.
- Add seasoned beef cubes on top of the vegetables evenly.
- Mix beef broth, Worcestershire sauce, minced garlic, thyme, and bay leaf in a bowl, then pour over the ingredients in the Crock Pot.
- Cook on LOW for 8 hours until beef is fork-tender and vegetables are soft.
- After cooking, remove the bay leaf and stir the stew to blend flavors.
