- In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), chopped green onions, cheddar cheese, hot sauce, and Cajun seasoning. Blend until smooth and creamy.
- On a clean surface, lay an egg roll wrapper diagonally. Spoon a heaping tablespoon of the filling into the bottom corner. Fold the corner over the filling, tuck in the sides, and roll up tightly to seal.
- In a deep skillet, heat vegetable oil to reach a depth of about 2 inches and heat to 350°F (175°C). Test readiness by dropping in a small piece of wrapper.
- Carefully add assembled egg rolls to the hot oil. Fry for 3–4 minutes until golden brown and crispy, turning occasionally. Drain on paper towels.
- Transfer egg rolls to a serving platter and enjoy hot with dipping sauces like ranch dressing or tangy remoulade.
