- In a large mixing bowl, sift together flour, baking powder, and salt. Mix in melted coconut oil and warm water until a slightly tacky dough forms.
- Transfer the dough onto a floured surface and knead for 10-15 minutes until smooth and elastic. Form into a ball and cover with a damp towel.
- Let the dough rest for 30 minutes, then cut into 8 pieces. Roll each piece into a ball and cover again.
- Flatten each dough ball to about 1/16 inch thickness using a tortilla press or rolling pin.
- Heat vegetable oil in a deep skillet between 350-375°F. Fry each disc for about 30-45 seconds on each side until golden brown.
- Remove from oil, let drain on paper towels, and coat with a mixture of cane sugar and ground cinnamon. Serve warm.
