- In a large mixing bowl, combine your leftover stuffing, mashed potatoes, and shredded turkey. Mix until everything is evenly combined.
- Scoop out portions of the mixture and roll them into balls about the size of a golf ball. Place the shaped balls on a plate or tray.
- In a shallow bowl, beat the egg until smooth. Dip each ball into the egg and then roll in panko breadcrumbs.
- Heat about an inch of oil in a skillet over medium heat. Fry each side of the balls for about 2-3 minutes until golden brown.
- Remove the fried balls from the skillet using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
