Marinating and Coating
- Prepare the Marinade by whisking together buttermilk, Thai red curry paste, fish sauce, soy sauce, and sugar in a bowl. Add chicken thighs, cover, and refrigerate for at least 4 hours.
- Mix the Coating by combining all-purpose flour, cornstarch, baking powder, salt, garlic powder, and black pepper in another bowl.
- Coat the Chicken by removing marinated chicken and letting excess drip off. Coat each thigh in the flour mixture, pressing to adhere.
- Heat the Oil in a skillet until it reaches 350°F (175°C).
- Fry the Chicken for 7-8 minutes per side until golden and cooked through, then drain on paper towels.
- Prepare the Spicy Mayo by mixing mayonnaise with Sriracha to taste.
- Toast the Buns until golden brown.
- Assemble the Sandwich by spreading spicy mayo, layering fried chicken, lettuce, and pickles, then topping with the bun.
- Serve with lime wedges for squeezing over the top.
