Method
 

Marinating and Coating
  1. Prepare the Marinade by whisking together buttermilk, Thai red curry paste, fish sauce, soy sauce, and sugar in a bowl. Add chicken thighs, cover, and refrigerate for at least 4 hours.
  2. Mix the Coating by combining all-purpose flour, cornstarch, baking powder, salt, garlic powder, and black pepper in another bowl.
  3. Coat the Chicken by removing marinated chicken and letting excess drip off. Coat each thigh in the flour mixture, pressing to adhere.
  4. Heat the Oil in a skillet until it reaches 350°F (175°C).
  5. Fry the Chicken for 7-8 minutes per side until golden and cooked through, then drain on paper towels.
  6. Prepare the Spicy Mayo by mixing mayonnaise with Sriracha to taste.
  7. Toast the Buns until golden brown.
  8. Assemble the Sandwich by spreading spicy mayo, layering fried chicken, lettuce, and pickles, then topping with the bun.
  9. Serve with lime wedges for squeezing over the top.
