Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper, spritz with cooking spray.
  2. In a large mixing bowl, combine the chopped spinach, crumbled feta cheese, almond flour, egg, olive oil, garlic powder, salt, and black pepper. Stir until it forms a cohesive yet slightly crumbly mixture.
  3. Using a tablespoon, scoop out portions of the mixture and place them on the prepared baking sheet. Gently flatten each mound to about 1/4-inch thick.
  4. Bake for 15-18 minutes until golden brown at the edges and dry on top. Keep an eye on them for the perfect bake.
