For the Sauce

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground lamb or beef, finely chopped red onion, minced garlic, grated tomato, and fresh parsley. Add ground cumin, coriander, paprika, allspice, and cinnamon, along with salt and black pepper to taste. Drizzle in olive oil, and mix until well combined.
  2. Cut each Lebanese-style pita in half to create pockets. Fill each one with a portion of the meat mixture, and add cheese or sauce if desired.
  3. Brush the outside of each filled pita with olive oil to achieve a crispy finish.
  4. Heat your grill or skillet to medium heat. Cook each stuffed pita for 3–4 minutes per side until golden brown and crispy.
  5. Remove the Arayes from heat, let them rest for a minute, then cut into wedges or serve whole, paired with salads or yogurt dips.
