Ingredients
  

For the Chicken
  • 1 kg Chicken Pieces boneless thighs recommended
  • 1 tbsp Salt for marinating
  • 1 tsp Pepper ground black pepper
  • 1 tsp Garlic Powder or fresh garlic
  • 1 tsp Ginger Powder or fresh ginger
  • 3 tbsp Soy Sauce low-sodium preferred
  • 2 tbsp Rice Wine or vinegar
For the Batter
  • 1 cup Potato Starch essential for crispiness
  • 1/2 cup All-Purpose Flour omit if prioritizing potato starch
  • 1 tsp Baking Powder for a lighter batter
  • 1 cup Cold Water adjust for batter thickness
For Frying
  • Oil Vegetable Oil with a high smoke point
For the Sauce
  • 3 tbsp Gochujang for yangnyeom sauce
  • 2 tbsp Sugar brown sugar preferred
  • 2 cloves Garlic freshly chopped for sauce
To Serve
  • 1 cup Pickled Daikon for refreshing palate

Method
 

Chicken Preparation
  1. Marinate the chicken with salt, pepper, garlic powder, ginger powder, soy sauce, and rice wine for at least 30 minutes, preferably overnight.
Sauce Preparation
  1. Prepare the sauce by combining gochujang, sugar, and garlic in a saucepan over medium heat, stirring until glossy and slightly thickened.
Batter Preparation
  1. Whisk together potato starch, all-purpose flour, baking powder, and salt. Gradually add cold water until achieving a smooth batter.
First Fry
  1. Pat dry marinated chicken and dip in batter. Heat oil to 160°C (320°F) and fry for 8-10 minutes until pale golden.
Second Fry
  1. Increase oil temperature to 190°C (375°F) and fry again for 3-4 minutes until deeply golden brown.
Serving
  1. Toss fried chicken in prepared sauce and serve immediately with pickled daikon.
