Chicken Preparation
- Marinate the chicken with salt, pepper, garlic powder, ginger powder, soy sauce, and rice wine for at least 30 minutes, preferably overnight.
Sauce Preparation
- Prepare the sauce by combining gochujang, sugar, and garlic in a saucepan over medium heat, stirring until glossy and slightly thickened.
Batter Preparation
- Whisk together potato starch, all-purpose flour, baking powder, and salt. Gradually add cold water until achieving a smooth batter.
First Fry
- Pat dry marinated chicken and dip in batter. Heat oil to 160°C (320°F) and fry for 8-10 minutes until pale golden.
Second Fry
- Increase oil temperature to 190°C (375°F) and fry again for 3-4 minutes until deeply golden brown.
Serving
- Toss fried chicken in prepared sauce and serve immediately with pickled daikon.
