Step-by-Step Instructions
- Start by bringing a large pot of salted water to a rapid boil over high heat. Once boiling, gently add the gnocchi and cook them for about 2-3 minutes, or until they float to the surface. Carefully remove the gnocchi with a slotted spoon and let them drain in a colander while you prepare to fry them.
- In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add the drained gnocchi to the pan, being sure not to overcrowd them. Allow the gnocchi to cook undisturbed for 2-3 minutes until the bottoms develop a beautiful golden-brown crust.
- With a spatula, gently stir the gnocchi, turning them to brown all sides evenly. Continue to cook for another 2-3 minutes until they are golden brown and crispy on all sides.
- Lower the heat to medium, then add minced garlic to the pan with the crispy gnocchi. Sauté for about 1 minute, stirring frequently, until the garlic becomes fragrant.
- Next, add in the fresh spinach, stirring gently to combine it with the garlic and gnocchi. Cook until the spinach is wilted, which should take about 2-3 minutes.
- Sprinkle in salt, black pepper, and red pepper flakes if you like a bit of heat. Toss everything together, ensuring the seasoning is evenly distributed.
- Finally, remove the pan from heat and gently stir in the crumbled feta cheese until it’s well incorporated and starts to melt slightly. Serve warm straight from the pan.
