  • 4 ounces Feta Cheese or goat cheese, omit for dairy-free
  • 2 cloves Garlic minced
  • Salt to taste
  • Black Pepper to taste
  • Red Pepper Flakes optional, to taste

Method
 

Preparation Steps
  1. Boil a large pot of salted water and cook the gnocchi for 2-3 minutes until they float to the surface. Remove and drain.
  2. In a frying pan, heat olive oil over medium-high heat. Add the drained gnocchi, cooking undisturbed for 2-3 minutes until golden and crispy on one side.
  3. Stir the gnocchi for another 2-3 minutes until crispy on all sides.
  4. Reduce heat and add minced garlic. Sauté for 1 minute until fragrant.
  5. Fold in the fresh spinach, stirring for 2-3 minutes until wilted.
  6. Season with salt, black pepper, and red pepper flakes to taste. Remove from heat.
  7. Gently fold in crumbled feta cheese before serving.
