Cookie Preparation
- Brown the butter in a saucepan over medium heat, stirring frequently for 5-7 minutes until golden brown.
- In a bowl, whisk together the flour, baking soda, cornstarch, and salt.
- In a stand mixer, combine the cooled brown butter with granulated and brown sugar. Beat for 2-3 minutes until light and fluffy.
- Add in egg, egg yolk, vanilla extract, and milk. Mix until smooth.
- Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined.
- Fold in the chopped bittersweet chocolate.
- Form dough balls using a cookie scoop, pressing two pieces together lightly.
- Chill the cookie balls in the freezer for 15 minutes or the fridge for 25 minutes.
- Preheat the oven to 350°F (175°C) and bake chilled dough for 10 minutes. Bang the tray on the oven door and bake for an additional 3-4 minutes.
- Cool the cookies on the baking sheet for 5-7 minutes before transferring them to a wire rack.
