Cookie Preparation
  1. Brown the butter in a saucepan over medium heat, stirring frequently for 5-7 minutes until golden brown.
  2. In a bowl, whisk together the flour, baking soda, cornstarch, and salt.
  3. In a stand mixer, combine the cooled brown butter with granulated and brown sugar. Beat for 2-3 minutes until light and fluffy.
  4. Add in egg, egg yolk, vanilla extract, and milk. Mix until smooth.
  5. Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Fold in the chopped bittersweet chocolate.
  7. Form dough balls using a cookie scoop, pressing two pieces together lightly.
  8. Chill the cookie balls in the freezer for 15 minutes or the fridge for 25 minutes.
  9. Preheat the oven to 350°F (175°C) and bake chilled dough for 10 minutes. Bang the tray on the oven door and bake for an additional 3-4 minutes.
  10. Cool the cookies on the baking sheet for 5-7 minutes before transferring them to a wire rack.
