Step-by-Step Instructions

  2. Slice the zucchini into even 1/4-inch rounds and pat dry with a paper towel.
  3. In a large mixing bowl, combine zucchini with olive oil, garlic powder, Italian seasoning, sea salt, and black pepper. Toss well.
  4. Add most of the Parmesan cheese (saving 2-3 tablespoons) and toss again.
  5. Arrange the zucchini slices in a single layer on the baking sheet.
  6. Sprinkle the reserved Parmesan over the zucchini slices.
  7. Bake for 18-22 minutes, flipping halfway through.
  8. Let the zucchini cool for a few minutes before serving, optionally garnish with parsley or lemon zest.
