- In a blender, combine half a ripe avocado, sour cream, lime juice, cilantro, kosher salt, and water. Blend until smooth and creamy.
- Heat avocado oil in a skillet over medium heat, add ground turkey and taco seasoning. Cook until browned, about 5 to 7 minutes.
- Add chopped onion to the skillet and cook until soft, about 3 minutes.
- Stir in black beans and green chiles into the turkey mixture. Sprinkle in remaining taco seasoning and optional cilantro. Simmer for 15 minutes.
- Preheat the oven to 425°F (220°C). Assemble the tacos by spooning turkey filling onto tortillas and topping with cheese.
- Fold the tortillas in half and arrange on a baking sheet. Bake for 10 to 12 minutes until golden brown and crispy.
- Serve hot with the creamy avocado sauce for dipping.
