Ingredients
  

Turkey Filling
  • 1 lb Ground Turkey Choose 85/15 or 93/7 for less fat
  • 1 can Black Beans Canned, drained
  • 1 can Green Chiles Hatch chiles are great for heat
  • 1 cup Monterey Jack Cheese Shredded
  • 6 Flour Tortillas 6-inch fajita size
  • 2 tbsp Homemade Taco Seasoning spice mix including cumin and chili powder
Avocado Sauce
  • 1 medium Avocado Ripe
  • 1/2 cup Sour Cream can substitute with Greek yogurt
  • 1/4 cup Cilantro fresh, optional
  • 1 tbsp Lime Juice freshly squeezed

Method
 

Preparation
  1. In a blender, combine half a ripe avocado, sour cream, lime juice, cilantro, kosher salt, and water. Blend until smooth and creamy.
  2. Heat avocado oil in a skillet over medium heat, add ground turkey and taco seasoning. Cook until browned, about 5 to 7 minutes.
  3. Add chopped onion to the skillet and cook until soft, about 3 minutes.
  4. Stir in black beans and green chiles into the turkey mixture. Sprinkle in remaining taco seasoning and optional cilantro. Simmer for 15 minutes.
  5. Preheat the oven to 425°F (220°C). Assemble the tacos by spooning turkey filling onto tortillas and topping with cheese.
  6. Fold the tortillas in half and arrange on a baking sheet. Bake for 10 to 12 minutes until golden brown and crispy.
  7. Serve hot with the creamy avocado sauce for dipping.
