  • 1 teaspoon Black Pepper Adjust to taste
For Binding and Coating
  • 1 large Egg For vegan option, use a flax egg
  • 2 tablespoons Olive Oil For brushing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the dried chickpeas until mostly broken down but still chunky.
  3. Stir in the cooked rice, panko breadcrumbs, garlic, and herbs. Season with onion powder, smoked paprika, salt, and black pepper.
  4. Add a whisked egg and mix until the mixture holds together.
  5. Cover and chill the mixture in the refrigerator for at least 30 minutes.
  6. Scooping out about two tablespoons, roll them into balls about 1.5 inches in diameter.
  7. Roll each ball in panko breadcrumbs to coat.
  8. Arrange on the baking sheet, brush with olive oil, and bake for 20-25 minutes until golden brown.
  9. Allow to cool slightly before serving with your choice of dipping sauces.
