  • 1 large Egg beaten, can substitute with flax egg

  • 1 cup Breadcrumbs Panko or Regular

Step-by-Step Instructions
  1. Ensure your leftover mashed potatoes are chilled and firm, refrigerate if too soft.
  2. Combine chilled mashed potatoes with mozzarella, Parmesan, garlic powder, onion powder, salt, pepper, and beaten egg in a large mixing bowl.
  3. Roll about a tablespoon of potato mixture into a ball, aiming for 12-15 balls.
  4. Roll each ball in breadcrumbs until evenly coated.
  5. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  6. Arrange the balls in a single layer in the air fryer basket, lightly spray the tops with cooking oil.
  7. Air fry for 10-12 minutes, checking halfway until golden brown and crispy.
  8. Allow to cool for a few minutes before serving with dipping sauces.
