  • 1 cup cherry tomatoes 150g; any small tomato works, and halving them enhances their juiciness.
For the Vinaigrette
  • 3 tbsp extra virgin olive oil 45ml; use high-quality oil for maximum flavor.
  • 1 tbsp white wine vinegar 15ml; apple cider vinegar can be a good substitute.
  • 0.5 tsp kosher salt 3g; feel free to adjust to taste, or use sea salt.
  • 0.5 tsp coarse black pepper 1g; freshly cracked pepper is recommended for the best taste.
For Garnish
  • 2 tbsp fresh green herbs 10g; a mix of parsley and basil is delightful.

Method
 

Instructions
  1. Wash and dry the cucumber thoroughly, slice it into thick half-moons, and set aside.
  2. Halve the cherry tomatoes and drain the mozzarella pearls.
  3. In a small bowl, whisk together the olive oil, white wine vinegar, and kosher salt.
  4. In a large bowl, combine the cucumber, tomatoes, and mozzarella, folding gently.
  5. Pour the vinaigrette over the salad and toss gently to combine.
  6. Garnish with chopped herbs and black pepper before serving.
