Step-by-Step Instructions for Creamy Tuscan Gnocchi
  1. In a large skillet over medium heat, melt 2 tablespoons of unsalted butter. Add 2 minced garlic cloves and sauté for 30–60 seconds until fragrant.
  2. Pour in 1 cup of heavy cream and 1 cup of low-sodium chicken or veggie broth. Stir gently and bring to a gentle simmer for 2–3 minutes.
  3. Add 1 pound of potato gnocchi and 1/2 cup of chopped sun-dried tomatoes. Cover the skillet and let it cook for about 4 minutes.
  4. Remove the lid, stir gently, and cook uncovered for an additional 2–3 minutes until the gnocchi is tender and the sauce has thickened.
  5. Stir in 2 cups of fresh baby spinach, 1/2 cup of grated Parmesan cheese, and 1 tablespoon of lemon juice. Mix until cheese melts.
