Ingredients

For the Base
  • 1 cup Fresh Strawberries Substitute with your favorite berries for a different twist.
  • 1 cup Unsweetened Vanilla Almond Milk Swap with soy or coconut milk if preferred.
  • 1/2 cup Greek Yogurt Regular yogurt can be used as a substitute, or go for dairy-free yogurt for a vegan option.
For the Thickening
  • 1/4 cup Chia Seeds Essential for thickening; no substitutions recommended.
For Sweetness
  • 2 tbsp Maple Syrup A natural sweetener; honey makes a great alternative but isn't vegan.

Equipment

  • Blender
  • Mixing Bowl
  • whisk
  • Plastic wrap

Method

Step-by-Step Instructions
  1. In a blender, add the sliced strawberries, unsweetened vanilla almond milk, Greek yogurt, and a splash of vanilla extract. Blend on high for about 1-2 minutes until the mixture is smooth and creamy, with no chunks of strawberry remaining.
  2. Pour the blended mixture into a large mixing bowl. Add the chia seeds and whisk vigorously for about 30 seconds, ensuring that the seeds are evenly distributed throughout the liquid.
  3. Give your chia pudding mixture a taste test. If you prefer a sweeter flavor, dribble in maple syrup gradually, mixing well after each addition.
  4. Cover the bowl with plastic wrap or a lid, and place it in the refrigerator. Allow the pudding to chill for at least 4 hours, or ideally overnight.
  5. Once the pudding has set, remove it from the refrigerator and give it a good stir. Scoop the creamy mixture into serving bowls or glasses, and add your favorite toppings.
