Step‑by‑Step Instructions
  1. Wash and peel the potatoes thoroughly. Cut them into even chunks, roughly 1–2 inches in size.
  2. Add the cut potatoes to a pot, fill with cold water, add salt, and bring to a boil. Reduce heat to simmer for 15-20 minutes until fork-tender.
  3. Drain the potatoes and return them to the pot over low heat to evaporate excess moisture. Mash to desired consistency.
  4. In a bowl, whisk together sour cream, melted butter, garlic, smoked paprika, salt, and black pepper. Combine with the mashed potatoes.
  5. Stir in the grated cheddar cheese until fully incorporated.
  6. Preheat oven to 350°F (175°C). Transfer the mixture to a greased baking dish and bake for 25-30 minutes until golden brown.
  7. Let cool for a few minutes, then garnish with chives or green onions before serving.
