For the Soup Base
  • 2 tablespoons Unsalted Butter Use salted butter if unsalted is unavailable
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 1/4 cup All-Purpose Flour Cornstarch can be used for gluten-free
  • 4 cups Broth (Vegetable or Chicken) Low-sodium is preferred
  • 1 cup Whole Milk Can substitute with half & half or heavy cream
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Paprika Smoked paprika is recommended
  • to taste Pepper Black or white pepper
For the Vegetables
  • 4 cups Broccoli Chopped, fresh or frozen
  • 1 medium Carrot Grated
For the Star Ingredient
  • 1 cup Smoked Gouda Freshly grated

Method
 

Step-by-Step Instructions
  1. Melt 2 tablespoons of unsalted butter in a large pot over medium heat. Add 1 diced onion and sauté for about 4 minutes until translucent.
  2. Stir in 2 minced garlic cloves and cook for an additional 30 seconds.
  3. Sprinkle in 1/4 cup of all-purpose flour, stirring continuously for 1 minute to form a roux.
  4. Gradually whisk in 4 cups of broth and 1 cup of whole milk, stirring to combine smoothly. Add 1 teaspoon of salt, 1 teaspoon of paprika, and pepper.
  5. Stir in 4 cups of chopped broccoli and 1 grated carrot. Cook on medium-high heat for about 3-4 minutes.
  6. Reduce heat to low and cover, cooking for 10-12 minutes until the broccoli is tender.
  7. Remove pot from heat and stir in 1 cup of freshly grated smoked gouda until melted.
  8. Ladle the soup into bowls and enjoy!
