- Melt 2 tablespoons of unsalted butter in a large pot over medium heat. Add 1 diced onion and sauté for about 4 minutes until translucent.
- Stir in 2 minced garlic cloves and cook for an additional 30 seconds.
- Sprinkle in 1/4 cup of all-purpose flour, stirring continuously for 1 minute to form a roux.
- Gradually whisk in 4 cups of broth and 1 cup of whole milk, stirring to combine smoothly. Add 1 teaspoon of salt, 1 teaspoon of paprika, and pepper.
- Stir in 4 cups of chopped broccoli and 1 grated carrot. Cook on medium-high heat for about 3-4 minutes.
- Reduce heat to low and cover, cooking for 10-12 minutes until the broccoli is tender.
- Remove pot from heat and stir in 1 cup of freshly grated smoked gouda until melted.
- Ladle the soup into bowls and enjoy!
