Step-by-Step Instructions
  1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, around 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. Sauté the Aromatics: In a skillet, heat olive oil over medium heat. Add diced onion and chopped jalapeño, sauté for about 3 minutes until onion is translucent.
  3. Add Garlic and Spinach: Introduce minced garlic and baby spinach to the skillet. Cook for another 2 minutes until spinach wilts.
  4. Blend the Sauce: Transfer sautéed mixture to a blender with roasted poblano peppers, cilantro, sour cream, and bouillon. Blend until smooth.
  5. Combine Sauce with Pasta: Pour blended sauce back into the pot on low heat. Stir in reserved cream cheese and adjust texture with pasta water.
  6. Serve and Garnish: Plate the spaghetti, garnish with chopped cilantro, crumbled cheese, and pepitas if desired.
