Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  2. Cut chicken breasts horizontally to create thin cutlets and pound to uniform thickness.
  3. Marinate chicken cutlets in olive oil, minced garlic, Italian seasoning, salt, and pepper for 15-30 minutes.
  4. Sauté spinach in a skillet over medium heat until wilted, about 2-3 minutes.
  5. Beat cream cheese until smooth, then fold in sautéed spinach and half of the mozzarella cheese.
  6. Arrange the marinated chicken cutlets in the baking dish, spoon the creamy spinach mixture over them, and top with remaining mozzarella.
  7. Bake for 20-30 minutes until chicken is cooked through and cheese is melted and lightly browned.
  8. Let the casserole rest for 5 minutes before slicing to serve.
