Step-by-Step Instructions
  1. Start by rinsing and soaking the dried Great Northern beans in a large bowl for at least 8 hours or preferably overnight.
  2. In a large pot, cook the thick-cut bacon over medium heat for about 8-10 minutes until crispy.
  3. In the same pot with the bacon drippings, sauté the chopped onion, carrots, and celery for about 5 minutes.
  4. Add the minced garlic and sauté for an additional minute.
  5. Return the crispy bacon to the pot along with the soaked beans, chicken broth, dried thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat to low and let it simmer for about 1 hour.
  7. After simmering, check the seasoning and ladle the soup into bowls to serve.
