  • 1 cup Cottage Cheese
  • 1 large Egg Beaten
  • 2 stalks Green Onions Finely chopped
  • 2 tablespoons Parsley Chopped, optional
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt Adjust to taste
  • 1/4 teaspoon Black Pepper
  • 1 cup Panko Breadcrumbs Substitute with gluten-free for gluten-free option
  • 2 tablespoons Olive Oil For frying

Method
 

  1. In a medium bowl, thoroughly mix the drained canned tuna with cottage cheese until evenly combined using a fork.
  2. Add one beaten egg, finely chopped green onions, parsley, garlic powder, salt, and black pepper to the mixture. Stir until well-combined.
  3. Gradually fold in the panko breadcrumbs until the mixture thickens and holds together for forming patties.
  4. Shape the mixture into 6 equal-sized patties, each about 2½ inches wide.
  5. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat until shimmering.
  6. Carefully place the patties in the hot skillet and cook for 3-4 minutes on one side until golden brown, then flip and cook the other side.
  7. Once fully cooked, transfer the patties to a paper towel-lined plate to absorb excess oil. Serve warm with dipping sauce.
