Step-by-Step Instructions

  2. In a large bowl, mash 2 to 3 ripe bananas until smooth, then add 1 cup cottage cheese, 2 eggs, 1/4 cup maple syrup, and 1 teaspoon vanilla extract.
  3. Gradually mix in 2 cups almond flour, 1 teaspoon baking soda, and 1 teaspoon cinnamon until just combined.
  4. Pour the batter into the prepared loaf pan and smooth the top.
  5. Bake for about 50 minutes, or until the top is golden brown and a toothpick comes out clean.
  6. Let the bread cool for 10 minutes in the pan, then invert onto a wire rack to cool completely.
