Method
 

Preparation
  1. In a shallow container, whisk together the eggs, coconut milk, granulated sugar, coconut extract, and vanilla until fully combined.
  2. Spread the shredded coconut evenly on a large plate.
  3. Heat a non-stick frying pan or griddle over medium heat.
  4. Dip each slice of French bread into the egg mixture, allowing it to soak for about 15 seconds per side.
  5. After soaking, carefully transfer the bread slices to the plate with shredded coconut and press down gently.
  6. Grease the preheated pan with a little butter and place the coated bread slices in the pan.
  7. Cook for about 3-4 minutes per side until each slice turns a lovely golden brown.
  8. Transfer the slices to a plate and dust them lightly with confectioner's sugar before serving.
