Step-by-Step Instructions
  1. Bloom the gelatin by sprinkling it over 2 tablespoons of cold water, let it sit for 5-10 minutes.
  2. Heat the cream mixture: Combine coconut milk, heavy cream, and sugar in a saucepan and gently stir until sugar dissolves, but do not boil.
  3. Incorporate the gelatin: Remove from heat, stir in the bloomed gelatin and vanilla until smooth.
  4. Pour and cool the mixture into molds or cups and cool for about 30 minutes at room temperature.
  5. Refrigerate for at least 4 hours until fully set and firm to the touch.
  6. Prepare the topping by dicing fresh pineapple into small pieces.
  7. Serve by inverting the panna cotta onto a plate, top with diced pineapple and optional garnishes.
