- Bloom the gelatin by sprinkling it over 2 tablespoons of cold water, let it sit for 5-10 minutes.
- Heat the cream mixture: Combine coconut milk, heavy cream, and sugar in a saucepan and gently stir until sugar dissolves, but do not boil.
- Incorporate the gelatin: Remove from heat, stir in the bloomed gelatin and vanilla until smooth.
- Pour and cool the mixture into molds or cups and cool for about 30 minutes at room temperature.
- Refrigerate for at least 4 hours until fully set and firm to the touch.
- Prepare the topping by dicing fresh pineapple into small pieces.
- Serve by inverting the panna cotta onto a plate, top with diced pineapple and optional garnishes.
