Ingredients
  

For the Roasted Vegetables
  • 1 can Chickpeas drained and rinsed
  • 1 medium Red Bell Pepper diced
  • 1 medium Red Onion cut into wedges
  • 2 cups Potatoes cut into ¾-inch cubes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Paprika
  • 1 teaspoon Dried Basil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Dill optional
  • 1 teaspoon Dried Parsley
  • to taste Salt
  • to taste Black Pepper
For the Creamy Tzatziki Sauce
  • 1 cup Plain Yogurt (Greek or Plant-Based)
  • ½ cup Raw Cashews soaked
  • ½ cup Firm Tofu blended
  • 1 small Fresh Cucumber grated and drained
  • 1 tablespoon Red Wine Vinegar
  • 1 tablespoon Fresh Dill or swap for dried if needed
  • 1 tablespoon Lemon Juice

Method
 

Roasted Vegetables Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the vegetables by dicing the potatoes, cutting the red bell pepper, and slicing the red onion. Rinse and drain the chickpeas.
  3. Mix the spices together in a small bowl.
  4. Toss the veggies and chickpeas with olive oil and the spice blend in a large bowl, then spread on a baking sheet.
  5. Roast in the oven for about 40 minutes, stirring halfway through.
Tzatziki Sauce Instructions
  1. Blend yogurt, soaked cashews, tofu, and a bit of garlic until smooth.
  2. Stir in cucumber, dill, red wine vinegar, salt, pepper, and lemon juice.
  3. Taste and adjust seasoning as necessary.
Assembly Instructions
  1. Serve tzatziki in bowls topped with roasted vegetables and crispy chickpeas.
