Preparation
- Preheat oven to 400°F (200°C).
- Wash and cube potatoes, slice red bell pepper, and wedge red onion. Rinse and drain chickpeas.
Roasting
- Combine paprika, dried basil, garlic powder, oregano, dill, parsley, salt, and black pepper in a mixing bowl.
- Transfer prepared vegetables and rinsed chickpeas to a baking sheet. Drizzle with olive oil and sprinkle spice blend. Toss well.
- Spread the mixture evenly on the baking sheet and roast for 40 minutes, stirring halfway.
Tzatziki Preparation
- Blend yogurt, soaked cashews, firm tofu, and garlic until smooth. Add grated cucumber, dill, red wine vinegar, salt, pepper, and lemon juice, and blend again.
Assembly
- Serve roasted vegetables in a bowl topped with tzatziki sauce.
