Ingredients
  

Roasted Vegetables
  • 1 can Chickpeas rinsed and drained
  • 1 medium Red Bell Pepper sliced
  • 1 medium Red Onion wedged
  • 2 medium Potatoes cubed
  • 3 tablespoons Olive Oil
  • 1 teaspoon Paprika
  • 1 teaspoon Dried Basil
  • 1 teaspoon Oregano
  • 1 teaspoon Dill
  • 1 teaspoon Parsley
  • to taste Salt
  • to taste Black Pepper
Tzatziki Sauce
  • 1 cup Yogurt Greek or plant-based
  • 1/2 cup Raw Cashews soaked
  • 1/2 cup Firm Tofu
  • 1 clove Garlic
  • 1 medium Cucumber grated and moisture squeezed out
  • 1 tablespoon Red Wine Vinegar
  • 1 tablespoon Lemon Juice freshly squeezed

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Wash and cube potatoes, slice red bell pepper, and wedge red onion. Rinse and drain chickpeas.
Roasting
  1. Combine paprika, dried basil, garlic powder, oregano, dill, parsley, salt, and black pepper in a mixing bowl.
  2. Transfer prepared vegetables and rinsed chickpeas to a baking sheet. Drizzle with olive oil and sprinkle spice blend. Toss well.
  3. Spread the mixture evenly on the baking sheet and roast for 40 minutes, stirring halfway.
Tzatziki Preparation
  1. Blend yogurt, soaked cashews, firm tofu, and garlic until smooth. Add grated cucumber, dill, red wine vinegar, salt, pepper, and lemon juice, and blend again.
Assembly
  1. Serve roasted vegetables in a bowl topped with tzatziki sauce.
