  • 1 cup sliced mushrooms shiitake or cremini recommended
  • 4 tablespoons low-sodium soy sauce tamari for gluten-free
  • 2 tablespoons rice wine vinegar apple cider vinegar can be used
  • 2 tablespoons sriracha sauce adjust to spice preference
  • 1 teaspoon ground white pepper or substitute with black pepper
For Thickening
  • 2 tablespoons corn starch can use arrowroot for corn-free
  • 1/4 cup cold water
For Protein and Texture
  • 2 large eggs can omit for vegan dish
  • 1 cup extra-firm tofu or cooked chicken as substitute
For Freshness
  • 4 tablespoons chopped green onions or chives if unavailable

Method
 

Instructions
  1. In a large saucepan, bring 6 cups of chicken broth to a gentle simmer over medium-high heat.
  2. Once the broth is simmering, add in sliced mushrooms, low-sodium soy sauce, rice wine vinegar, sriracha sauce, and ground white pepper. Allow to simmer for 5 minutes.
  3. In a small bowl, mix corn starch with 1/4 cup of cold water to create a slurry. Gradually stir this into the broth.
  4. Reduce the heat slightly, and while gently stirring, slowly pour in the beaten eggs.
  5. Introduce the extra-firm tofu and the chopped green onions, stirring well.
  6. Ladle the soup into bowls, garnishing with additional green onions if desired.
