  • 1 medium Yellow Onion Finely diced.
  • 3 cloves Garlic Minced.
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream Coconut milk for dairy-free option.
  • 1 teaspoon Ground Cumin Adjust to taste.
  • 1 teaspoon Sugar Optional, to balance the heat.
For Garnish and Sides
  • 1/4 cup Fresh Cilantro Chopped.
  • 4 servings Rice or Quinoa Or serve with Fried Plantains.

Step-by-Step Instructions
  1. Season the Chicken with salt and black pepper; let it rest for 10 minutes.
  2. Sear the Chicken in olive oil for 4-5 minutes on each side until golden.
  3. Sauté the Yellow Onion in the same skillet until translucent.
  4. Add Garlic and Ground Cumin, sauté until fragrant.
  5. Incorporate Ají Amarillo Paste; cook for 2 minutes.
  6. Add Chicken Broth, then mix in Heavy Cream and cook until thickened.
  7. Simmer the Chicken in the sauce for 5 minutes.
  8. Garnish with Fresh Cilantro and serve with Rice or Quinoa.
