  2. In a mixing bowl, combine halved baby potatoes and sausage with olive oil. Add ranch seasoning, garlic powder, onion powder, and black pepper. Toss until well-coated.
  3. Line a baking sheet with parchment paper and spread the mixture in a single layer. Roast for 25-30 minutes, flipping halfway through, until golden brown.
  4. Sprinkle shredded cheddar cheese over the roasted mixture and return to the oven for an additional 5 minutes to melt the cheese.
  5. Remove from the oven, garnish with chopped parsley, and serve hot, optionally with sour cream or green onions.
