Step-by-Step Instructions
- Preheat your oven to the temperature specified on the tater tots package, usually around 425°F. Spread the tater tots in a single layer on a baking sheet and bake for 20-25 minutes until golden brown and crispy. Let cool slightly and crush into smaller pieces.
- In a large skillet, heat a drizzle of oil over medium heat. Add ground beef or turkey, season with salt and pepper, and cook for about 7-10 minutes until browned. Drain excess fat.
- In a mixing bowl, combine crushed tater tots with cooked meat and shredded cheddar cheese. Mix in some Monterey Jack cheese for creaminess.
- Warm tortillas in a dry skillet for 10-15 seconds on each side or microwave in damp paper towels for 20-30 seconds. This makes them pliable.
- Lay a warm tortilla flat and add a scoop of filling to the center. Drizzle with chipotle sauce and add sour cream if desired. Fold sides in and roll tightly.
- Place assembled burritos seam-side down in a greased baking dish. Sprinkle extra shredded cheese on top and bake at 350°F for 15-20 minutes until cheese is bubbly and golden.
- Once baked, cool for a few minutes, then cut in half and garnish with fresh toppings. Serve alongside a salad or tortilla chips.
