- Preheat your oven to 375°F (190°C).
- Lay low-carb tortillas flat and spread marinara sauce on each.
- Sprinkle shredded mozzarella cheese over the sauce.
- Layer pepperoni slices evenly on top of the cheese.
- Starting from one end, carefully roll each tortilla tightly.
- Brush the exterior of the tortillas lightly with olive oil.
- Place rolled tortillas seam-side down on a parchment-lined baking sheet and bake for 10-12 minutes.
- After baking, allow to cool for a few minutes and then slice into bite-sized pieces.
