  • 1.5 medium Bell Pepper, chopped Any color; red or yellow are sweeter.
  • 1 cup Black Beans, rinsed and drained Canned beans save time.
  • 1 cup Corn Can use fresh, frozen, or canned.
  • 2 tbsp Taco Seasoning Store-bought or homemade.
  • 2 tsp Ground Chipotle Chili Adjust according to heat preference.
  • 0.5 tsp Ground Cumin For warm, earthy flavor.
  • 3 tbsp Tomato Paste Thickens the filling.
  • 0.25 cup Chicken Broth Can substitute with vegetable broth.
For the Assembly
  • 13 oz Cheddar Cheese, shredded Tillamook sharp cheddar recommended.
  • 10 Flour Tortillas Whole wheat or gluten-free varieties can be used.
  • 4 tbsp Vegetable Oil Can also use canola oil.
For Serving
  • Salsa Can also include guacamole or pico de gallo.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 200°F (95°C) and line a baking sheet with parchment paper.
  2. Heat 1.5 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-5 minutes until translucent.
  3. Add 1 pound of ground turkey to the skillet. Cook for about 5 minutes until browned and cooked through.
  4. Stir in the chopped bell pepper, black beans, corn, taco seasoning, chipotle chili, and cumin. Cook for an additional 5-7 minutes.
  5. Add 3 tablespoons of tomato paste and 1/4 cup of chicken broth. Stir until combined and simmer for 1-2 minutes.
  6. Assemble the quesadillas by placing the turkey mixture in a flour tortilla, sprinkle with cheddar cheese, and fold in half.
  7. In the same skillet, add 4 tablespoons of vegetable oil over medium heat and fry the quesadillas for about 2 minutes per side until golden brown.
  8. Transfer fried quesadillas to the baking sheet in the oven to keep warm while you cook the remaining.
  9. Once all quesadillas are ready, cut in half and serve with salsa and any favorite toppings.
