Step-by-Step Instructions for Chicken Avocado Melt Sandwich
  1. Season the chicken breasts with salt and pepper. Heat a skillet over medium-high heat and add olive oil. Cook chicken for 6-7 minutes per side until golden brown. Let rest, then slice into strips.
  2. Slice the avocado, cheese, red onion, and tomato. Keep ingredients ready for assembly.
  3. Spread mayonnaise on one side of each bread slice and a swipe of Dijon mustard on top.
  4. Layer the sliced chicken, avocado, cheese, red onion, and tomato on the uncoated side of two slices of bread. Top with remaining bread, mayo side down.
