Step-by-Step Instructions for Chicken Avocado Melt Sandwich
- Season the chicken breasts with salt and pepper. Heat a skillet over medium-high heat and add olive oil. Cook chicken for 6-7 minutes per side until golden brown. Let rest, then slice into strips.
- Slice the avocado, cheese, red onion, and tomato. Keep ingredients ready for assembly.
- Spread mayonnaise on one side of each bread slice and a swipe of Dijon mustard on top.
- Layer the sliced chicken, avocado, cheese, red onion, and tomato on the uncoated side of two slices of bread. Top with remaining bread, mayo side down.
