Step-by-Step Instructions for Cheesy Baked Veggie Rolls
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and finely chop your chosen mixed vegetables.
  3. In a mixing bowl, combine the chopped vegetables with ricotta cheese, half of the mozzarella, and grated Parmesan. Add seasoning and mix well.
  4. On a floured surface, unfold your puff pastry and cut into 4x6 inch rectangles.
  5. Spoon the vegetable filling onto one edge of each pastry rectangle and roll tightly, sealing edges.
  6. Brush the tops of the rolls with egg wash and place them on the baking sheet.
  7. Bake in the preheated oven for about 25 minutes, until golden brown.
  8. Allow to cool for a few minutes before serving warm.
