Step-by-Step Instructions for Cheesy Baked Veggie Rolls
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and finely chop your chosen mixed vegetables.
- In a mixing bowl, combine the chopped vegetables with ricotta cheese, half of the mozzarella, and grated Parmesan. Add seasoning and mix well.
- On a floured surface, unfold your puff pastry and cut into 4x6 inch rectangles.
- Spoon the vegetable filling onto one edge of each pastry rectangle and roll tightly, sealing edges.
- Brush the tops of the rolls with egg wash and place them on the baking sheet.
- Bake in the preheated oven for about 25 minutes, until golden brown.
- Allow to cool for a few minutes before serving warm.
