Method
 

Making the Pretzels
  1. Dissolve yeast: Combine warm water, sugar, and yeast in a bowl and let sit until frothy.
  2. Mix dry ingredients: Whisk together flour and kosher salt in a large bowl.
  3. Combine ingredients: Gradually add flour mixture to yeast mixture, stirring until shaggy dough forms.
  4. Knead dough: Transfer to floured surface and knead for 5-7 minutes until smooth.
  5. Let it rise: Shape into a ball, place in an oiled bowl, cover, and let rise for 30 minutes.
  6. Preheat oven: Set oven to 425°F and line baking sheet with parchment paper.
  7. Prepare baking soda bath: Boil water in a pot and stir in baking soda.
  8. Shape pretzels: Punch down dough, divide into 8 pieces, and shape into pretzels.
  9. Boil pretzels: Immerse in baking soda bath for 30 seconds per side.
  10. Stuff cheese: Cut opening on top of each pretzel and fill with cheese.
  11. Egg wash: Brush beaten egg over pretzels and sprinkle with sea salt.
  12. Bake: Place in oven and bake for 15-20 minutes until golden brown.
  13. Cool and serve: Let cool for 5 minutes before serving with dipping sauces.
