Step-by-Step Instructions
  1. Dissolve yeast by combining warm water, granulated sugar, and active dry yeast. Let sit for 5 minutes until frothy.
  2. Mix dry ingredients: whisk together all-purpose flour and kosher salt in a large bowl.
  3. Combine mixtures: pour yeast mixture into dry ingredients, mixing until a dough forms.
  4. Knead dough on a floured surface for 5-7 minutes until elastic.
  5. Let it rise in a lightly oiled bowl covered for 30 minutes until it doubles in size.
  6. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  7. Prepare baking soda bath by boiling water and adding baking soda.
  8. Shape pretzels by dividing dough into 10 pieces, rolling each into a rope, and forming into a pretzel shape.
  9. Boil each pretzel in the baking soda bath for 30 seconds, then place on baking sheet.
  10. Stuff sliced pretzels with shredded cheese carefully.
  11. Brush with egg wash and sprinkle with coarse sea salt.
  12. Bake for 15-20 minutes until golden brown and cheese is bubbling.
