  • 2 tbsp Cajun Seasoning Adjust amount based on heat preference.
  • 2 tbsp Tomato Paste Consider crushed tomatoes for more sauce.
  • 1 cup Chicken Stock Vegetable stock works for vegetarian option.

Step-by-Step Instructions
  1. Heat a large cast iron skillet over medium heat for about 2 minutes. Add cooking oil to coat the bottom evenly.
  2. Add sliced sausage to the skillet and sauté for 4-5 minutes until browned. Remove sausage and set aside.
  3. In the same skillet, add sliced onions and sauté for 2-3 minutes until they soften and turn translucent.
  4. Stir in minced garlic and sliced bell peppers. Sauté for an additional 2-3 minutes until the peppers are tender.
  5. Add tomato paste and chicken stock, mixing until combined. Let sauce simmer for 1-2 minutes.
  6. Sprinkle in Cajun seasoning, adjusting for heat preference. Fold the browned sausage back into the skillet.
  7. If sauce is too thick, add more chicken stock. Cook for an additional minute and serve.
