Step-by-Step Instructions
  1. Begin by shredding or julienning the carrots using a grater or a food processor. This process should take about 5 minutes.
  2. In a medium bowl, whisk together the minced garlic, rice or apple cider vinegar, and sugar. Add sesame oil and whisk until combined.
  3. Transfer the shredded carrots into a large mixing bowl and pour the dressing over them. Toss thoroughly to coat the carrots.
  4. Sprinkle in the chopped green onions and gently mix them in.
  5. Sprinkle sesame seeds on top, give it a light toss, and let it rest for a moment.
  6. For best taste, let the salad chill in the refrigerator for about 15-30 minutes before serving.
