  • 1/2 teaspoon cayenne pepper optional

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine olive oil, soy sauce, minced garlic, fresh thyme, smoked paprika, black pepper, salt, and lemon juice. Whisk together until smooth.
  2. Add the bone-in, skin-on chicken thighs to the marinade, fully coating each piece. Cover and refrigerate for at least 1 hour, ideally 4-6 hours or overnight.
  3. Preheat your grill to medium-high heat, around 400°F (200°C), about 15 minutes before grilling.
  4. Remove chicken thighs from the marinade, allowing excess to drip off. Discard the leftover marinade. Grill skin-side down for 6-8 minutes until crisp.
  5. Flip the chicken thighs using tongs and grill for another 6-8 minutes until the internal temperature reaches 165°F (75°C).
  6. Remove chicken from the grill and let rest for about 5 minutes to retain juiciness.
  7. Serve with grilled vegetables, rice, or salad.
