Step-by-Step Instructions
  1. In a large mixing bowl, combine the old-fashioned rolled oats, milk, and coconut yogurt. Stir well for 1-2 minutes until smooth.
  2. Sprinkle in your desired sweetener and lemon zest. Mix for another 1-2 minutes until evenly distributed.
  3. Fold in chia seeds and fresh blueberries. Gently stir for 30 seconds.
  4. Cover and refrigerate overnight or for at least 6-8 hours.
  5. In the morning, combine 1 cup of blueberries, chia seeds, and maple syrup in a saucepan. Simmer for 5-7 minutes until thick.
  6. Serve the oats topped with blueberry compote and granola. Enjoy!
