- In a medium bowl or jar, combine old-fashioned rolled oats, almond/coconut/cashew milk, and coconut yogurt. Stir well until mixed and the oats are soaked.
- In a small saucepan, add blueberries, maple syrup, lemon juice, and vanilla extract. Cook over medium heat for 8-10 minutes until the mixture thickens. Remove from heat and cool.
- Divide the oat mixture into jars. Layer blueberry compote over the top. Cover and refrigerate overnight.
- The next morning, top with additional compote and granola, if desired, before serving.
