Ingredients
  

Oats Base
  • 1 cup Old-Fashioned Rolled Oats or large flake oats
  • 1 cup Almond/Coconut/Cashew Milk any plant-based milk
  • 1/2 cup Coconut Yogurt or regular yogurt
  • 2 tablespoons Chia Seeds optional but recommended
Blueberry Compote
  • 1 cup Blueberries fresh or frozen
  • 2 tablespoons Pure Maple Syrup or raw honey/rice malt syrup
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Vanilla Extract
For Serving
  • to taste Granola optional topping

Method
 

Preparation
  1. In a medium bowl or jar, combine old-fashioned rolled oats, almond/coconut/cashew milk, and coconut yogurt. Stir well until mixed and the oats are soaked.
  2. In a small saucepan, add blueberries, maple syrup, lemon juice, and vanilla extract. Cook over medium heat for 8-10 minutes until the mixture thickens. Remove from heat and cool.
  3. Divide the oat mixture into jars. Layer blueberry compote over the top. Cover and refrigerate overnight.
  4. The next morning, top with additional compote and granola, if desired, before serving.
