Preparation Steps
- In a mixing bowl, combine peeled and deveined shrimp with olive oil and Cajun seasoning. Allow to marinate for about 10 minutes.
- Bring a large pot of salted water to a boil. Add fettuccini and cook for 8-10 minutes until al dente. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add mushrooms and shallots, sautéing for 5-6 minutes until mushrooms are golden brown.
- Increase heat to medium-high and add marinated shrimp to the skillet. Cook for 2-3 minutes until shrimp turn pink. Remove shrimp and set aside.
- Pour chicken broth into the skillet, scraping the bottom. Bring to a gentle simmer and reduce for 2-3 minutes.
- Mix sour cream and cornstarch until smooth, then stir into the reduced broth. Cook on low heat for 2-3 minutes until thickened.
- Add sautéed mushrooms, shallots, shrimp, roasted red bell peppers, and capers to the skillet, stirring to combine. Heat through for 2 minutes.
- Plate cooked fettuccini and ladle Blackened Shrimp Stroganoff over the top. Serve hot.
