Preparation
- Preheat oven to 350°F (175°C) and prepare a 9x9 inch baking pan by lining with parchment paper.
- In a large bowl, sift together flour, baking powder, salt, cocoa powder, and espresso powder if using.
- Melt butter, oil, and 1/3 cup sugar in a saucepan over low heat; remove from heat and let cool slightly.
- Whisk eggs, yolk, remaining sugar, and vanilla in another bowl until thick and pale.
- Gradually combine the warm butter mixture into the egg mixture, whisking continuously.
- Fold dry ingredients into wet ingredients without overmixing.
- Gently fold in chocolate chips until just combined.
- Pour batter into the prepared pan and bake for 28-30 minutes until edges are firm.
- Cool completely on a wire rack, lift out and slice into squares.
