- In a mixing bowl, combine cooked ground beef, sliced beef pepperoni, shredded mozzarella cheese, pizza sauce, and Italian seasoning. Stir well and set aside.
- Place a large skillet on the stove and add olive oil. Heat over medium until shimmering.
- Lay one tortilla flat in the skillet. Spoon half of the beef pepperoni filling over the tortilla. Place another tortilla on top and press down.
- Cook for 3-4 minutes until golden brown. Do not burn.
- Flip the quesadilla and cook for an additional 3-4 minutes until golden and cheese is melted.
- Transfer to a cutting board, cool briefly, slice into wedges, and serve with pizza sauce.
