For the Crunch
  • 1 cup panko breadcrumbs or regular breadcrumbs
For the Bang Bang Sauce
  • 0.5 cup mayonnaise vegan mayo works
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust for heat
For Serving
  • 8 pieces soft tortillas corn tortillas for gluten-free
  • 2 cups shredded cabbage
  • 1 large avocado, sliced highly recommended
  • 1 piece lime, cut into wedges for serving

Method
 

Step-by-Step Instructions
  1. Soak shrimp in buttermilk for at least 30 minutes for tenderness.
  2. In a bowl, mix flour, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.
  3. Dredge shrimp in seasoned flour, then buttermilk, and finally coat in panko.
  4. Heat oil in a skillet to 350°F (175°C) and fry shrimp for 2-3 minutes each side until golden.
  5. Mix mayonnaise, sweet chili sauce, and sriracha for the Bang Bang sauce.
  6. Warm tortillas, layer with cabbage, shrimp, and drizzle with sauce.
  7. Serve immediately with lime wedges.
