Step-by-Step Instructions
  1. Cream the softened unsalted butter with granulated and light brown sugar until pale and fluffy, about 3 minutes.
  2. Mix in the large egg, mashed ripe bananas, and vanilla extract until well combined.
  3. Whisk together the all-purpose flour, ground cinnamon, baking soda, baking powder, and salt in a separate bowl.
  4. Gradually add the dry mixture to the wet mixture using a spatula, folding gently to combine.
  5. Chill the dough in the refrigerator for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop mounds of dough onto the baking sheet.
