- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened unsalted butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Mix in the honey until well combined.
- Whisk together all-purpose flour, ground cinnamon, ground cardamom, and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chopped pistachios and walnuts.
- Shape the dough into small balls and flatten them slightly on the baking sheet. Bake for 10-12 minutes until edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
- Beat the cream cheese and powdered sugar until smooth and creamy.
- Spread cream cheese filling on the bottom side of one cookie and top with another cookie to create a sandwich.
- Drizzle caramel sauce over the cookies and sprinkle additional chopped nuts on top.
