Method
 

Instructions
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened unsalted butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Mix in the honey until well combined.
  4. Whisk together all-purpose flour, ground cinnamon, ground cardamom, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chopped pistachios and walnuts.
  6. Shape the dough into small balls and flatten them slightly on the baking sheet. Bake for 10-12 minutes until edges are golden brown.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  8. Beat the cream cheese and powdered sugar until smooth and creamy.
  9. Spread cream cheese filling on the bottom side of one cookie and top with another cookie to create a sandwich.
  10. Drizzle caramel sauce over the cookies and sprinkle additional chopped nuts on top.
